Potato Pie Recipe

Potato pie is one of my favourite comfort foods.  It mixes some of my favourite things and I am a carb junkie at heart.  Potato pie just makes it a bit more of a fun presentation of mashed potatoes too.  This is so great that my sister actually hid a slice of it under her pillow as a child – no not in a ziploc or anything, the slice just under her pillow so she could eat some later!

Potato Pie: Ingredients

All of these ingredients can be changed to taste, I guestimate it each time I make potato pie.

  • 2lbs potatoes – I like to use Yukon Golds but any suitable for mashed potato are fine
  • Splash of milk or cream
  • 30-50g cream cheese (feel free to add more)
  • 1/2 small-medium onion, chopped into small pieces
  • 1 heaping tablespoon grainy mustard
  • 100g cheese, grated
  • 2 tablespoons breadcrumbs
  • spray oil (from a misto or PAM etc)

The breadcrumbs may seem like overkill but it stops it sticking, and who doesn’t like some carb on carb action?

Potato Pie: Instructions

  1. Peel and boil potatoes leaving them slightly harder than you usually would (they still need to cook in the oven later).  While potatoes are boiling:
  2. In a pan, caramelize the onions on a low heat.
  3. Spray a shallow pie dish with oil and lightly dust it with breadcrumbs – I like to line mine with foil so I can easily remove it and peel it away from the potato pie.
  4. Mash potatoes with cream cheese, mustard and milk/cream – do not over mash, you want it to be slightly chunky.
  5. Mix in caramelized onions and 2/3 of the cheese.
  6. Spoon mixture into your pie dish and top with remainder of grated cheese.
  7. Bake at 350 for 15-20 minutes until cheese is bubbly and it removes easily from the pie dish.
  8. Allow to cool for about 5-10 minutes before cutting.

Cut into eight sections.  It should serve 4 easily but I can fully admit to eating another serving because I could not stop picking at it.  we have added leftover meat chopped into small pieces to the pie and used it for easy portions for lunches, it reheats well but is good cold too.
